Leftovers omelet

I was hungry.

I had a few eggs, some parmesan, leftover pasta (link) and leftover cold ratatouille (link).

So I decided to cook myself a pasta omelet (or frittata or tortilla...) with a cold ratatouille topping.



First thing, heat a skillet with a little olive oil.









Add the pasta for a quick fry.








Add the eggs (previously beaten with a little milk and seasoned with salt and pepper).







Slowly mix the eggs and pasta in order to even out the cooking process.








Cover with shreded parmesan







Flip.









Garnish.




And then eat!

Wasn't that a fast, easy and delicious way to clean the fridge!
